I made this bread for a recent vegan potluck and was given really great feedback so decided to post it here. This bread is suitable for breadmakers and it makes a softgrain loaf. I’ve posted the ingredients needed for a 1.5 pound loaf. As always bread makers will vary so these are the ingredients and methods for mine.
The thing I really love about this loaf is that you can mix it up with different herbs and spices depending on your mood. Today I used thyme, rosemary and parsley but pretty much any dried herb and spice will work.
1 and 1/16 cups room temperature water
1 and 1/2 tbsp melted butter (I use pure soya for this)
1/2 tsp salt (I actually rarely use salt but you really can’t avoid it in bread)
1 and 1/2 tbsp skimmed milk powder (I use EcoMil for this which is available from the vegan store and goodness direct – links in my stores page)
3 tbsp sugar (be sure to use vegan sugar as not all sugar is vegan)
3 cups strong white bread flour (I use dovesfarm as it is vegan and gluten free)
3/4 tsp fast action yeast (again I use from dovesfarm)
Simply add all ingredients to your breadmaker and use the softgrain or sandwich setting. Takes about 2 and a half hours for this size and leave to rest and cool before cutting.
